  3. How long is the contract? Annual + auto-renew is a red flag in 2026.
  4. How do I export my data if I leave? The honest vendors document this on a public page.
  5. What's the KOT-to-kitchen latency? Push-based is 0.4s. Polling-based is 5-30s. Restaurants notice.
